Harvest:

Grapes are manually harvested in small crates with selection in the vineyard, usually in the third decade of October, from Nerello Mascalese and Nerello Cappuccio vines grown on volcanic sandy soils on Mount Etna.

Vinification:

The wine is produced in a traditional Etna palmento, the ancient lava-stone winemaking structure of the volcano. Fermentation follows traditional methods, preserving the identity of the grapes and the territory. The wine then ages in amphora, maintaining freshness, fruit purity and the savoury volcanic character of Etna.

Fresh, expressive and volcanic, with notes of cherry, dark berries, raspberry, wild herbs, spice and delicate smoky nuances, supported by lively acidity, present tannins and a savoury mineral finish.
