Sabina Metodo Classico Extra Brut 2018 is a Blanc de Noir sparkling wine made from 100% Pinot Nero by Ca’ dei Conti in Tregnago, in the hills east of Verona. The grapes come from a one-hectare, south-facing vineyard at 400–450 metres altitude, planted on calcareous-marly, stony soils with vines between 30 and 50 years old.
The grapes are harvested by hand from late August and gently pressed as whole bunches, using only the free-run must. After the first fermentation in stainless steel, the second fermentation takes place in bottle according to the Metodo Classico, followed by an exceptional 84 months of ageing on the lees.
Deep straw yellow with a fine, persistent perlage, Sabina offers an elegant and evolved bouquet with notes of bread crust and cassis. On the palate it is dry, balanced and smooth, with a precise, persistent finish.
