The harvest is done by hand, using small crates.

The vinification of Ostro 2022 begins with the use of small open plastic containers (10 q.li capacity). No selected yeasts are added, allowing the natural fermentation process to shine. The fermentation involves manual punch-downs and cap wettings to enhance extraction. Maceration lasts 4 to 8 weeks, depending on the condition of the grape skins, and malolactic fermentation is completed to achieve balance and smoothness. Aging takes place entirely in steel for approximately 12 months, preserving the wine's freshness and varietal character. No filtration is applied, ensuring the purity and integrity of the Vermentino grapes.

Bright golden in color, *Ostro 2022* offers a fresh profile with delicate aromas of citrus peel enhancing its elegant character. Subtle herbal notes of sage and rosemary intertwine with hints of anise and mint, leading to a refined and distinctly mineral finish.
