Vinification:

Soft pressing in an inert atmosphere, followed by static decantation of the must. Fermentation occurs at a controlled temperature in stainless steel tanks. The wine then undergoes lees aging for about 8 months before bottling, followed by bottle aging for about 6 months before being sold.

The altitude and mountain breezes facilitate the slow and gradual ripening of the Gewürztraminer grapes. Clongìan, with its clear and concentrated flavor, offers aromas of citrus fruits (mandarin and lemon peel), tropical fruits (lychee and guava), rose, and tarragon. With time in the bottle, these aromas transform into exotic spice notes, complemented by hints of white peach and apricot.
