This Brut Chardonnay - Metodo Classico of the Dolomites gives a balanced structure that captures the essence of the region. Crafted from prized Chardonnay grapes in the Cembra Valley, Corvée Brut is exquisitely fine and refined. Its broad and delicate bouquet evokes ripe fruits like quince, apricot, and Spadone pear, complemented by nuances of custard and white chocolate. With light touches of almond, strudel, and delicate hints of dried fruit, it offers a rich and persistent flavor profile.

Vinification:

Soft pressing, followed by static decantation of the must. Fermentation occurs at a controlled temperature in stainless steel tanks. The wine then undergoes lees aging for about 6 months in 225-liter French oak barrels of second and third passage, known as 'carati'. Finally, it is racked and undergoes further aging on the lees for over 36 months.

Tasting Notes:

Corvée Brut is elegant and refined. The bouquet is ample and delicate, reminiscent of ripe fruits such as quince, apricot, and Spadone pear, along with notes of custard and white chocolate. Light hints of almond and strudel, accompanied by delicate undertones of dried fruit, contribute to its rich and persistent flavor.
