Versante Nord Bianco 2024 is Eduardo Torres Acosta’s high-altitude white expression from the northern slopes of Mount Etna. Sourced from old vineyards located between 550 and 930 metres above sea level, this wine reflects the tension, light and mineral precision that define Etna’s volcanic landscape.

The grapes come from six historic contrade – Pietramarina, Allegracore, Piano Daini, Friera, Zucconero and Marchesa – where ancient alberello-trained vines grow on fine volcanic sands formed by successive lava eruptions. A field blend of Minnella and other native varieties, this wine represents the traditional mixed plantings of Etna’s old vineyards.

Elegant but energetic, structured yet vibrant, Versante Nord Bianco is a white wine of altitude, texture and raw volcanic identity.

Harvest:

Harvest takes place in the last week of September, when the high-altitude vineyards reach full phenolic maturity while preserving natural acidity. The vines are over 50 years old on average, trained in traditional alberello and Etna double cordon systems, cultivated naturally without intensive intervention. Altitude and old vines play a crucial role here: concentration without heaviness, freshness without sharpness.

Vinification:

The grapes are partially destemmed. Fermentation occurs spontaneously in cement tanks, with a short maceration on the skins for two days and no temperature control. The wine ages in cement and old 2.28 hl barrels for approximately 10 months. No technological manipulation. No cosmetic polishing. The goal is to preserve the volcanic imprint and textural depth created by altitude and old vines. This is not a simple aromatic white. It is a structured, lightly textural Etna white with character.

Tasting Notes:

Colour: Pale straw yellow with golden reflections. Nose: Subtle and mineral-driven. White flowers, citrus peel, wild herbs and a faint smoky note typical of volcanic soils. Palate: Tense and vertical. Saline, vibrant acidity, fine phenolic grip from the short skin contact. Notes of lemon zest, almond, Mediterranean herbs and a long mineral finish. The wine combines freshness and structure, making it suitable both for immediate drinking and short-term ageing.

Etna - Sicily

Eduardo Torres Acosta is an independent winemaker on Mount Etna, originally from Tenerife in the Canary Islands. After formative experiences with Arianna Occhipinti and later at Passopisciaro, he settled on the northern slopes of Etna, where high-altitude vineyards between roughly 550 and 800 metres define the character of his wines.

Working mainly with old alberello vines across historic contrade such as Pirrera, Arenaria and Quota N, Eduardo follows a minimal-intervention philosophy centred on spontaneous fermentations and respect for volcanic terroir. With a small annual production of around 25,000 bottles, his wines express precision, altitude and the raw energy of Etna’s landscape.
