Paòne Campania Fiano IGP 2023 by Cantina del Barone is made from Fiano grown in the hills of Irpinia near Cesinali in the province of Avellino, one of the most historic territories for this noble Campanian grape.

The vineyards grow on volcanic soils rich in minerals with the mother rock close to the surface, conditions that give the wine its distinctive smoky and mineral character. Fermentation occurs in stainless steel without the addition of selected yeasts, followed by maturation on fine lees for about 8–12 months and further bottle aging before release.

The result is a refined and expressive Fiano — fresh and mineral, with citrus and floral aromas supported by vibrant acidity and a long persistent finish.

Harvest:

Manual harvest of Fiano grapes from vineyards located near Cesinali in the Irpinia area of Campania. The vines grow on loose volcanic soils rich in minerals with the bedrock close to the surface, contributing to the wine’s characteristic mineral and smoky notes.

Vinification:

Manual harvest in small crates followed by soft pressing with a short maceration in the press. Fermentation occurs in stainless steel tanks without the addition of selected yeasts and lasts about two weeks. The wine then matures on fine lees in steel for about 8–12 months followed by additional bottle aging before release.

Tasting Notes:

Bright straw yellow. The nose shows aromas of citrus, white flowers and delicate mineral notes. On the palate the wine is fresh and elegant with vibrant acidity, a refined texture and a long mineral finish.

Cantina del Barone is a small family winery located in Cesinali in the Irpinia hills near Avellino. The Sarno family has cultivated vineyards in this area for generations, working with a strong focus on traditional farming and minimal intervention. The vineyards grow on volcanic soils influenced by the nearby Monte Terminio and Monte Partenio mountains, conditions that provide excellent sun exposure and significant temperature variation between day and night.

Cantina del Barone is also among the founding members of the V.I.T.I. association (Vignaioli in Terre d’Irpinia), a group of small producers committed to artisanal winemaking and to preserving the identity of Irpinia’s historic grape varieties.
