HARVEST:
The grapes, hand-picked in small crates, undergo a meticulous sorting process on a primary selection belt. After destemming, they undergo a second sorting on another belt before being conveyed into wooden vats for fermentation.
VINIFICATION:
The grapes are manually plunged by foot, allowing for a gentle and thorough maceration process lasting 10 to 15 days to extract aromas and quality tannins. Following racking, the wine briefly settles before gravity-fed transfer into lightly toasted French barriques (no new oak), where malolactic fermentation occurs naturally. Racking is timed with natural rhythms, using compressed air instead of pumps. After 12 months, the wine is blended in cement vats for an additional 6 months before bottling.

It presents a bright and intense ruby red color. On the nose, it reveals aromas of cherry, dark berries, shady undergrowth notes, hints of licorice root, and spices. The palate is smooth and harmonious, with ripe fruit, fine tannic texture, and a fresh, savory finish of good persistence.
