This olive oil is produced by a family-owned farm since 1871 in Tuscany's Val d’Elsa. The harvest is carried out in the first days of November, as soon as the mill opens. Every evening, the olives picked during the day are conferred to avoid oxidation and maximize the flavors of the fruit. Cold pressing is done by centrifuging the olive paste, using mechanical procedures only.
The particular mixture of sands and clays, as well as the location of the olive grove in the highest part of the farm properties, give the oil green hints, a hint of bitterness, and the characteristic spiciness of high-quality oils.
