VINIFICATION:
Soft pressing, followed by static decantation of the must. Fermentation occurs at controlled temperatures in stainless steel tanks. The wine then undergoes lees aging for about 6 months in 225-liter French oak barrels of second and third passage, known as 'carati'. Following this, the wine is racked off the lees and aged for over 36 months.
TASTING NOTES:
The color is pale straw yellow. The initial impression is dynamic, animated by vibrant acidity and minerality. This sensation evolves into an extremely precise and balanced savory finish, leaving the palate refreshed and clean. Aromas of fresh pineapple and citrus fruits intertwine with hints of aromatic herbs. Everything is harmoniously complemented by an elegant pastry-like sensation.
