The Marracone 2019 undergoes a meticulous vinification process. Fermentation occurs in small open plastic containers (10 q.li) with manual punch-downs and cap wettings, followed by a maceration period of 5 to 6 weeks, depending on the state of the skins. Malolactic fermentation is completed to enhance complexity and softness.
The wine is aged for two years, predominantly in 20 hl oak tonneaux with a small portion refined in stainless steel. No filtration ensures the preservation of its authentic character and depth.
