VINIFICATION:
Soft pressing in an inert atmosphere, followed by static decantation of the must. Fermentation occurs at a controlled temperature in stainless steel tanks. The wine then undergoes lees aging for about 10 months in French oak barrels of second and third passage, known as 'tonnaux'. Finally, it undergoes bottle aging for about 6 months before being sold.
