VINIFICATION:
Soft pressing, followed by static decantation of the must. Fermentation occurs at a controlled temperature in stainless steel tanks. The wine then undergoes lees aging for about 6 months in 225-liter French oak barrels of second and third passage, known as 'carati'. Finally, it is racked and undergoes further aging on the lees for over 36 months.
TASTING NOTES:
Corvée Brut is elegant and refined. The bouquet is ample and delicate, reminiscent of ripe fruits such as quince, apricot, and Spadone pear, along with notes of custard and white chocolate. Light hints of almond and strudel, accompanied by delicate undertones of dried fruit, contribute to its rich and persistent flavor.
