Brunello di Montalcino DOCG La Togata is a testament to natural vineyard selection and meticulous cellar care. Made from 100% Sangiovese grapes, this wine is aged in Slavonian oak barrels for three years, followed by further refinement in the bottle. It features a deep ruby red color with garnet reflections and offers an ethereal, complex bouquet. On the palate, it is powerful and full-bodied, with a robust structure and austere tannins, complemented by smooth peppery and leathery notes. Ideal with red meat, aged cheeses, and traditional cured meats, this wine reflects the elegance and longevity of the Montalcino hills.

VINIFICATION:
The vineyards undergo a double thinning of the grape clusters, and during harvest, an average selection criterion of three clusters out of five is applied in good years. The grapes are further selected in the cellar and processed according to ancient tradition. An intense extraction occurs in the early stages of fermentation, followed by a long maceration on the skins. The maximum temperature is raised to 33°C and maintained at high levels until racking.
