Questo "Palistorti" Colline Lucchesi Rosso - 2022 D.O.C. presenta una splendida tonalità rubino radiante e vivaci profumi di ciliegia, frutti di bosco scuri e sottili sfumature di sottobosco. Il suo palato morbido e armonioso rivela sapori di frutta matura, tannini delicati e un finale fresco e saporito. Realizzato in biodinamica, subisce fermentazione spontanea in botti di rovere e matura per 12 mesi. Ideale per accompagnare carne rossa, selvaggina e formaggi stagionati.

HARVEST:
The grapes, hand-picked in small crates, undergo a meticulous sorting process on a primary selection belt. After destemming, they undergo a second sorting on another belt before being conveyed into wooden vats for fermentation.
VINIFICATION:
The grapes are manually plunged by foot, allowing for a gentle and thorough maceration process lasting 10 to 15 days to extract aromas and quality tannins. Following racking, the wine briefly settles before gravity-fed transfer into lightly toasted French barriques (no new oak), where malolactic fermentation occurs naturally. Racking is timed with natural rhythms, using compressed air instead of pumps. After 12 months, the wine is blended in cement vats for an additional 6 months before bottling.
TASTING NOTES:
It presents a bright and intense ruby red color. On the nose, it reveals aromas of cherry, dark berries, shady undergrowth notes, hints of licorice root, and spices. The palate is smooth and harmonious, with ripe fruit, fine tannic texture, and a fresh, savory finish of good persistence.
