Operandi Rosè, della cantina Piandaccoli, è l'ultima variazione nella vinificazione del raro vitigno Mammolo. Questo vitigno versatile offre aromi diversi e intriganti. Operandi presenta un colore rosa pallido, con delicate note di violetta, lampone, fragola e accenni di agrumi. Al palato, rispecchia gli aromi del naso con buona freschezza e facilità di beva. Abbinamenti ideali includono antipasti, piatti fritti, frutti di mare, crostacei e carpacci, in particolare le acciughe fritte.
