Il vino rosso Ebrius, della cantina Valle del Sole, è un Sangiovese in purezza, prende il nome dal fiore detto "ditania" rappresentato, tratto dall'opera di Umberto Eco "Il nome della rosa", dove viene descritto come causa di intossicazione al solo tocco, simile all'effetto di aver bevuto vino. Questo Sangiovese vanta un colore rosso rubino intenso. Il suo aroma è complesso, con note di frutti rossi, prugne, balsamico, accenni di cacao e caffè. In bocca offre un'esperienza piena e armoniosa, con eleganti tannini vellutati e una lunga persistenza. Ebrius si abbina eccezionalmente bene con carni rosse, cacciagione e stufati.

HARVEST:
The grape harvest is done manually, with additional bunch selection in the vineyard before destemming.
VINIFICATION:
Grape pressing is done through manual punching down and pumping over. The grapes undergo fermentation with indigenous yeasts in tubs and concrete tubs at a verified temperature of 28/30°C. Following fermentation, the wine is matured for 18 months in French durmast barrels as the second step, ranging in size from 500 to 2000 liters.
TASTING NOTES:
The wine presents itself with an intense ruby red color. Its aroma is intense and complex, with notes of red fruits, plums, balsamic, hints of cocoa, and coffee. On the palate, it is full-bodied and harmonious, with elegant velvety tannins and a long persistence. This wine pairs excellently with red meats, game, and stews.
