VINIFICATION:
Vinification involves destemming and crushing the grapes, followed by inoculation with selected yeasts. Fermentation takes place with maceration in stainless steel tanks at 25°C, and then refermentation on the Amarone grape skins. Finally, the wine undergoes aging for 18 months in our own cellar.
